Salmon fillet with olive paste on linguine

In summer, light dishes such as salads, cold soups or simple pasta dishes are particularly popular. Stews and ragouts are rather out of place. Summer is therefore the perfect time to be inspired by Mediterranean cuisine. Fresh ingredients from the garden, aromatic spices and Mediterranean flavours bring that holiday feeling straight to your plate. Today we would like to introduce you to a special recipe:

Salmon fillet with organic green olive paste from Greece on linguine.

This dish combines the delicate flavour of salmon with the Mediterranean spice of olives. The pasta is not only wonderfully creamy but also the perfect side dish. Let's jump straight into the recipe. We'll start with the list of ingredients for a dish for about 4 portions. PS: For this recipe, we use high-quality Mediterranean ingredients that make all the difference:
Ingredients for 4 people:

  • 4 salmon fillets with skin: Fresh and rich in omega-3 fatty acids.
  • 100% organic virgin olive oil: essential in Mediterranean cuisine and ideal for cooking
  • Organic extra virgin olive oil: flavourful and ideal for refining
  • Pickled garlic in olive oil: for a gentle, aromatic flavour
  • Fresh rosemary: for that extra Mediterranean touch (preferably fresh from the herb patch)
  • Mani green olive paste: a special ingredient from Greece, for an intense flavour
  • Linguine: the classic Italian pasta that goes perfectly with creamy sauces
  • Cream and Parmesan: For creaminess and a rounded flavour.
  • Salt and pepper: To flavour.
  • Jalapeno powder: (optional) for that little something extra

Step-by-step preparation
The pasta and salmon dish is super simple, but there are 2 important things to bear in mind. Firstly, always fry the salmon fillets skin side down. Secondly, never throw away the pasta water in pasta dishes, as it may be needed for the sauce.

1. sear the salmon:

  • Heat a pan and pour in some of the 100% virgin olive oil.
  • Place the salmon fillets skin side down in the hot pan and fry for approx. 2 minutes until the sides turn white
  • Then reduce the heat considerably and add 3 cloves of the pickled garlic and a sprig of fresh rosemary. Cover the pan and cook the salmon for about additional 4 mintues

2. finish cooking the salmon in the oven:

  • Carefully place the salmon, rosemary and garlic in an oven dish (skin side down). Leave the remaining oil in the pan. We need the flavour of the oil for the pasta later)
  • Then generously brush the top of the salmon fillets with Mani green olive paste (this gives the salmon fillet a wonderful flavour and prevents it from drying out while cooking in the oven). Continue cooking the salmon in the oven at 180 degrees fan for approx. 10 minutes.

3. prepare the linguine:

  • While the salmon is in the oven, cook the linguine in plenty of salted water until very "al dente". Our tip: If the packet states a cooking time of 8-10 minutes, try it after just 7 1/2 minutes. If the pasta is still cooked and tossed in sauce, it should be very "al dente".
  • Drain the linguine, reserving some of the pasta water. (Important: we will need the pasta water later for the sauce)

4. finish the linguine in the pan:

  • Place the linguine in the pan with the remaining olive oil.
  • Add half a cup of cream and pour in half a cup of pasta water to thicken the sauce. (If it is not creamy enough, add more pasta water)
  • Add 2 more cloves of pickled garlic (which will be removed later).
  • Bring everything to the boil briefly and flavour with plenty of pepper. (Ideally fresh from the mill)
  • Grate the parmesan over the top to taste and mix well.

5 Serve:

  • Arrange the creamy linguine on plates. Optionally sprinkle with a little jalapeño powder.
  • Place the salmon fillets on top and garnish with a little extra olive oil and fresh parmesan, if desired.
  • Serve immediately and enjoy!
