Excellent white wine vinegar from Modena, Italy from the house of Carandini. The Carandini family has been synonymous with the finest vinegar creations since 1641. Carandini from Modena not only has excellent balsamic vinegars but also marvellous alternatives. For example, the organic white wine vinegar, which is an ideal fresh accompaniment to salads, for marinating vegetables, meat and fish and for flavouring sauces. This product is vegan.

Organic white wine vinegar - quality from Italy

With white wine vinegar from Carandini, you are not only opting for a natural white wine vinegar, but also for the best quality. The Carandini family, one of the oldest noble families in Modena, has cultivated the artisan tradition of vinegar and aceto production for generations. From Antonio to Giuseppe to Bianca and Emilio, the age-old craft of vinegar making has been passed down from parents to children, creating a passion for excellent vinegars, balsamic vinegars and condiments that are appreciated all over the world. The direct descendants of these noble practitioners of flavour continue the tradition today with the same passion and dedication.

Organic white wine vinegar production

Vinegar is basically obtained through a double natural fermentation process. In the first step, sugar is converted into alcohol and in the second step, the alcohol is converted into acetic acid. This applies to all fruit vinegars. Whether apple or grape. In the case of white wine vinegar, this means in detail that the sugar in the grape juice is converted into alcohol (i.e. becomes wine) and then the alcohol in the white wine is converted into vinegar.
Wine has a higher alcohol content than most fermented fruit juices and therefore also has a higher acetic acid content. This makes it taste more acidic and less sweet than other fruit vinegars (e.g. naturally cloudy apple vinegar).

What makes a high-quality white wine vinegar?

The quality of white wine vinegar starts with the selection of the grapes. High-quality grapes from controlled organic cultivation, grown without the use of herbicides and pesticides, are already a good start for a good wine. If a good wine is used as the starting product for vinegar production, this will certainly have an effect on the flavour of the vinegar. A good starting product therefore has a positive effect on a high-quality end product.
In vinegar fermentation, i.e. the conversion of white wine into white wine vinegar, it is above all a matter of care. The duration (as short as possible) and the avoidance of the addition of foreign alcohol (ethyl alcohol) are also decisive quality factors. If vinegar fermentation is not carried out properly, the end product will smell unpleasant (e.g. like nail polish remover) and/or the vinegar will have a sharp acidity with little flavour.
