Chamomile is probably one of the best-known and oldest types of tea and can be found in almost every kitchen. Chamomile has been known for centuries as a traditional drink and is valued for its mild, pleasantly floral flavour. ‘Mildly aromatic with hints of honey’ is a description we often hear. We recommend a dosage of 6 g chamomile flowers (approx. 2 heaped tablespoons) per litre of water. Either pour boiling water over them, leave to infuse for 3-4 minutes and strain. Or leave to infuse in a tea strainer. The tea can also be drunk cold.
Our recommendation: Camomile and apple iced tea
Preparation: Add 1 heaped tablespoon of loose camomile to 500 ml of boiling water. Leave to infuse for 3-4 minutes. Strain the camomile tea and pour over 250 g ice cubes. Peel 1 lime thoroughly and cut into large pieces. Mix 1 glass of naturally cloudy apple juice with the juice of one lime. Wash 1 organic lime in hot water and cut into small wedges. Pour the iced tea, apple and lime juice, 300 g ice cubes and lime wedges into a carafe or glass. Sweeten with honey or maple syrup to taste.
The loose camomile blossoms from Lisbon Tea Co. come from Portugal and are available in a 40 gram pack. This is enough for around 25 cups. The infusion time is 3 to 4 minutes and the camomile tea is mildly aromatic with hints of honey.
