Organic Retsina "Song of the Pines" from Greece

The organic Retsina from Tzivani called the Song of the Pines is subtly infused with pine resin. This Retsina is a cuvee of the international varieties Sauvignon Blanc & Chardonnay and the Greek grape variety Roditis. The grape varieties blend harmoniously to create a wonderful taste experience. In the bouquet wild flowers and peach with hints of pine needles. On the palate opulent and with depth, discreetly accompanied by the typical, slightly ethereal note of pine resin. A whole new (good) Retsina experience. The organic retsina from Tzivanis shows that retsina can also play in the big league of wine. This was also confirmed with a gold award at the Wine Award International 2022.

The Retsina "Song of the Pines" is excellent with grilled swordfish, classical or vegetarian
vegetarian moussaka, and mezedes (e.g. stuffed vine leaves).

What is retsina?

Retsina is a traditional Greek table wine that is mainly produced as a white, dry wine. It gets its uniqueness and special flavour from the addition of Aleppo pine resin during the fermentation process. Alternatively, resin from the Calibrian pine or imported yellow natural resin sandarak is also used.

The resin gives the retsina its characteristic fresh bitter taste, which is perceived as extremely appetising. It is important to know, however, that the pine resin is excreted after fermentation during the fining and filtration process and thus does not remain in the wine.

However, the addition of resin is not only for taste reasons, but long ago had the function of preventing oxidation processes in the wine. The origin of this probably lies in the sealing of wine amphorae in antiquity with resin.
