Mediterranea Belfiore's Passata di Pomodoro (tomato purée) is a real centrepiece of Italian cuisine and is the basis for many authentic Italian dishes and a must for any good tomato sauce.
The passata gives the dishes a natural sweetness and freshness that cannot be compared to canned tomatoes. The Passata di Pomodoro is an organic tomato puree made from tomato juice and pulp (99.3%), fresh basil (0.2%) and sea salt (0.5%). Belfiore's Passata di Pomodoro is affectionately known as Le Salse del Cuore, which means sauces of the heart. This shows the dedication and love for the product at Belfiore. The tomatoes are harvested quickly at the optimum ripeness point and processed into passata as quickly as possible and with great care. This means that after several washing cycles, the tomatoes are selected by hand and immediately converted into juice and pulp and cooked at low temperatures. The manufacturer of the tomato puree (Passata di Pomodoro) is Mediterranea Belfiore, a second-generation family business from Cecina, run by the three sisters Simonetta, Emiliana & Antonella Ciarlo.
In 1952, Donato Ciarlo founded the company Mediterranea Belfiore in Cecina, in the province of Livorno. Donato started out growing tomatoes. In 1974, a laboratory was set up for homemade tomato preserves. In 1989, the company began converting to processing organic tomatoes, eventually achieving full organic certification in 1996. Donato's daughters soon joined their parents' business and turned it into a successful company. Today, they are the driving forces behind the company. Mediterranea Belfiore is an example of tradition, love of Italian products and sustainable agriculture.
Belfiore's Tuscan passata specialities, called Le Salse del Cuore (sauces of the heart), are the result of dedication, tradition and quality. The quality selection of tomatoes for ‘Le Salse del Cuore’ begins in the fields with the selection of the most suitable organic soils, the best sun exposure and finally the best varieties. For a good passata, the optimal ripening point of the tomato is crucial to capture the sweet and full flavour of the tomato in the jar. To preserve the freshness and flavour of the fully ripe, freshly harvested fruit, processing must take place in a very short time. After being washed several times, the tomatoes are sorted by hand and immediately processed into juice, puree or sauce, cooked quickly and at a low temperature, which is essential to preserve the aroma.

A classic Italian tomato sauce quickly prepared
Ingredients:
- Passata di Pomodoro
- 2 garlic cloves
- basil
- 1 small red onion
- 2 tbsp olive oil
- 2 tbsp tomato paste
- Chilli to taste
Preparation:
In a medium saucepan, heat the olive oil over medium heat.
Fry the finely chopped onions, stirring occasionally, for about 2-3 minutes until soft and slightly golden brown. Add the tomato paste and fry briefly, about 1-2 minutes, until it starts to change colour and smells aromatic.
Add chilli to taste if you want some spiciness. The amount depends on your personal taste. Half a teaspoon of dried chilli flakes is a good starting point.
Add the Passata di Pomodoro (strained tomatoes) and stir well. Reduce the heat to low and simmer the sauce for about 15-20 minutes to combine the flavours and thicken the sauce.
Add the chopped basil to the sauce and simmer for another 2-3 minutes.
Season to taste with salt and pepper.
