Passata di Pomodoro (tomato purée) is a real centrepiece of Italian cuisine and is made from fresh, ripe tomatoes that are pureed and lightly sieved to achieve a velvety consistency. This tomato purée is the basis for many traditional Italian dishes and a must for any good tomato sauce. It gives the dishes a natural sweetness and freshness that cannot be compared to canned tomatoes. The Passata Freschissima is an organic tomato puree made from tomato juice and pulp (99.3%), fresh basil (0.2%) and sea salt (0.5%). What makes Belfiore tomato purée special is the care and dedication that goes into its preparation. To preserve all the freshness and fragrance of the ripe tomatoes, freshly picked, the processing is done in a very short time. After several washing cycles, the tomatoes are selected by hand and immediately transformed into juice, pulp and cooked at low temperatures.

A simple recipe for a tomato sauce for pasta: fry the finely chopped garlic in olive oil shortly on low heat, add the passata and season with salt and fresh Mediterranean herbs. Leave to boil down on a low heat for at least an hour and you have a delicious pasta sauce.

Passata Freschissima – tomato purée from Mediterranea Belfiore

The tomato purée (Passata Freschissima) comes from the house of Mediterranea Belfiore, a family business run by three sisters, Simonetta, Emiliana and Antonella Ciarlo, in Cecina. It is a story of love for agriculture and dedication to the production of high-quality organic tomato products. Belfiore's passata tomato sauces are affectionately and earnestly named Le Salse del Cuore, which translates as ‘sauces of the heart’. The qualitative selection of tomatoes for Le Salse del Cuore begins in the fields, where the most suitable organic soils, the best sunlight and the best varieties are selected. The farms in Tuscany and neighbouring areas, where the tomatoes come from, are also selected according to their latitude to ensure a constant flow of tomatoes with the same degree of ripeness. Since the optimal point of ripeness is a sweet taste, the tomatoes are now harvested by machine and processed as quickly as possible.

To preserve the freshness and flavour of the fully ripe, freshly harvested fruit, processing must take place in a very short time. After being washed several times, the tomatoes are sorted by hand and immediately processed into juice, puree or sauce, cooked quickly and at a low temperature, which is essential to preserve the aroma. The tomato specialities with added herbs and vegetables such as garlic, onions, carrots, celery and peppers are always fresh too; basil in particular is grown with great care by Belfiore, lovingly harvested by Mamma Renza and added by hand to each jar.
