Organic Aceto Balsamico di Modena IGP from Acetaia Bellei

This organic balsamic vinegar (Etichetta Marrone) with the brown label from Acetaia Bellei Luigi e Figli is one of the best in its class. The high viscosity (density) resulting from several years of ageing in oak barrels, the exclusive use of strictly selected organic ingredients from Italy, the intense dark brown colour and finally the balanced interplay of sweet and sour flavours give this Aceto Balsamico di Modena a great deal of elegance, charm and character. The production of this balsamic vinegar is characterised by a great deal of tradition and craftsmanship.

Acetaia Bellei is a small family business with a long tradition and a valuable heritage. The founder of Acetaia Luigi Bellei received valuable balsamic vinegar barrels from his mother, the oldest of which dates back to 1904. With this heritage and the centuries-old knowledge of aceto production, the company Bellei Luigi & Figli was officially founded in 1989. Since then, Acetaia Bellei Luigi e Figli has been recognised not only in Italy but also internationally as a producer of high-quality balsamic vinegar. The driving force behind this international success is not only the outstanding quality of the vinegar specialities, but also Luigi's daughter Mariangela, who runs the traditional company with a great deal of innovation, passion and love for aceto.

This passion for the product is also reflected in the packaging. A poem by Luigi Bellei, the founder of the Acetaia, is written on the fabric seal. The poem is about ‘his’ balsamic vinegar. It gives the product a personal touch and emphasises the tradition and love that go into every bottle.

Use of Organic Aceto Balsamico di Modena IGP Bellei - Brown label

With its exceptional density of at least 1.33 (traditional aceto has a density of 1.06) and its special sweetness, this Aceto Balsamico di Modena IGP is a real treat and extremely versatile. It is perfect for boiled and grilled meat, fish, vegetables or as a special dressing. It is also ideal for enhancing fresh fruit or cheese. It also goes perfectly with risotto, carpaccio, gnocchi, spelt and barley salads or to flavour braised porcini mushrooms, for example.

 

Beef carpaccio with a heavenly balsamic vinaigrette

Beef carpaccio is a delicious, light starter that is quick and easy to prepare.

Ingredients: 200 g fillet of beef (very good quality, preferably from the butcher), Parmesan cheese, pine nuts, rocket, high-density balsamic vinegar of Modena (min. 1.24), organic extra virgin olive oil, lemon juice, strawberries.

Preparation: Place the fillet of beef in the freezer for about 30-45 minutes to make it easier to cut into thin slices. Cut the slightly frozen fillet into wafer-thin slices and lay flat on a large plate. Sprinkle with a little lemon juice. Spread the rocket over the meat, sprinkle with Parmesan shavings and pine nuts. Drizzle with olive oil and the high-quality aceto. Best served with fresh baguette or ciabatta.
