The pickled ‘borettane’ onions in balsamic vinegar from Modena are an antipasti delicacy from Italy. The Aceto Balsamico di Modena (I.G.P.) gives the small, flat onions a mild acidity that harmonises perfectly with the sweetness of the onions. A treat for gourmets and a must for every starter platter.
The Italian municipality of Boretto in the province of Reggio Emilia in Emilia-Romagna is said to have given its name to these small onions. The combination of sweet onions with the complex flavour of balsamic vinegar has made this speciality internationally famous. Whether as a starter (antipasto) or as a side dish with meat, ham, cheese or sausage, the balsamic onions impress with their spicy flavour.
The small and flat Italian onions, known as borettane or boretto onions, are an indispensable part of northern Italian cuisine, whether in sauces, stews or as an antipasto. Here in Italy they are best known pickled. The namesake and birthplace of these little onions is said to be the Italian municipality of Boretto in the province of Reggio Emilia in Emilia-Romagna. The small borettano onions (approx. 3 to 4 cm in diameter) are harvested in Italy from the end of July. This type of onion has been cultivated in Italy for centuries and is highly valued for its sweet and mild flavour.
Borettone onions are traditionally pickled in Aceto Balsamico di Modena. Here, too, the origin lies in the Emilia-Romagna region. The acidic Aceto Balsamico di Modena harmonises with the sweetness of the onion and results in sweet and sour yet complex notes. This preparation, i.e. pickling in balsamic vinegar, is typical of Italian cuisine and is often served as an appetiser (antipasto) or as a side dish with meat, ham, cheese or sausage.

The history of the Bellei family dates back to the 19th century, when they were already involved in winegrowing and the traditional production of balsamic vinegar. Over the years, the family has remained true to its passion for the production of mature and high-quality vinegars. Their reputation first spread throughout Italy and later internationally.
