The delicious tangerine marmalade (Marmellata di Mandarini) with 60% fruit content comes from Calabria, the southernmost region of the Italian mainland. There, in the fertile plains along the coasts and in the river valleys, not only olives and wine thrive, but also a variety of citrus fruits such as oranges, bergamots, cedars and, of course, tangerines. Italian mandarin jam takes your taste buds on a trip to Calabria. Sarubbi's mandarin jam is made according to a traditional recipe that prioritises quality and authenticity. The result is a jam that preserves all the sweet and intense flavour of Calabrian mandarins. Whether for breakfast, as a filling for desserts or in combination with fresh and aged cheese, the natural tangerine jam from Calabria can be used in many ways.
The natural tangerine jam from Italy is not only an enrichment for the breakfast table but can also improve wonderful desserts and baking creations. Especially during the Christmas season, there are many recipes that call for a wonderful and aromatic tangerine jam. Here is one of our favourite ideas:
peanutsticks with mandarin jam and chocolate icing:
Knead a dough quickly from 150 g flour, 60 g sugar, 1 sachet of vanilla sugar, one egg and 60 g butter, wrap it in cling film and leave it to rest in the fridge for about 30 minutes. Roughly chop 100 g of peanuts and finely grind 100 g of peanuts. Put 50g of butter, 50g of peanut butter sugar, 1 sachet of vanilla sugar and 40g of honey (we recommend our organic orange blossom honey) in a pan and bring to the boil while stirring. Add the chopped and ground peanuts. Remove from the heat and allow to cool. Preheat the oven to 180°C. Roll out the dough and place on a baking tray lined with baking paper. Line the dough (use a metal mould or an aluminium foil border) and spread the mandarin jam on it first, then spread the peanut mixture on it. Bake in the oven for about 25 minutes. Cut into 3 x 2 cm strips while still warm and leave to cool. Melt the chocolate coating together in a bain-marie. Dip the strips into the chocolate coating on one or both sides or pour it over from above and allow to dry.
