The Italian organic and biodynamic macaroni pasta comes from Salamita, an agricultural cooperative that has existed since 1972. Today, the association includes 76 Demeter and 34 organic farms. The durum wheat semolina for the pasta comes from biodynamic farmland near the picturesque Sicilian town of Barcellona, in the northwest of the island, around the majestic Mount Etna. The macaroni pasta is made from 100% durum wheat semolina (pasta di semola di grano duro) and water. The pasta is free from additives.
A large pot is recommended for preparation. (Approximately 6 litres of water for 500 g of pasta is ideal). The water should be salted. The cooking time is about 11 minutes. Our recommendation: after 9 minutes, check whether the pasta is ‘al dente’. When the pasta is cooked, drain it and mix it immediately (without rinsing) with the pasta sauce.
Macaroni (often also spelt maccheroni) is one of the most well-known types of Italian pasta. The name ‘macaroni’ probably comes from the ancient Greek word ‘makaria’, which means ‘blessed meal’. In southern Italy, the term ‘macaroni’ was a general term for pasta and over time it became more specific and today refers to short, tube-shaped pasta. The tubular pasta, which is usually smooth or slightly ridged, is found in various Italian classics. This is because its shape is ideal for holding the pasta sauce. But international classics such as mac and cheese, with its creamy cheese sauce, are also traditionally made with macaroni. Despite the many variations and methods of preparation, the simplicity of macaroni remains a sign of Italian food culture - uncomplicated, tasty and always a pleasure.
