The Kalamata olives (from conventional farming) in Greece, more precisely from the Peloponnese, are harvested ripe. This gives them their characteristic dark purple to deep black-brown colour. After harvesting, the ripe olives are first cleaned and then naturally debittered in a traditional sea salt brine. The natural debittering is a lengthy process that takes several months. But this traditional debittering is worthwhile, because by the renunciation of chemical additives, the nutrients and monounsaturated fatty acids are preserved. The removal of the stone or pit is done by machine. After debittering and removing the pit, the olives are packed in Greek Gold MANI olive oil.
The Kalamata olives of the Kalamon variety are pitted and preserved in olive oil. The ingredients are therefore purely Kalamata olives (64%), extra virgin olive oil (36%), and sea salt. The olives are naturally debittered and preserved in extra virgin olive oil. The olives are from conventional cultivation. The Kalamata olive is an excellent table olive. Whether pure as an appetizer, in salads or in hot dishes - their unmistakable taste makes them a versatile ingredient.
