The harbour town of Kalamata in the Messinia region of the Peloponnese gives its name to this delicious table olive. The Kalamata olive is characterised by its oval shape, its dark purple to brown-black colour and its mild, fruity flavour. The Kalamata olives from MANI Bläuel are cultivated using traditional and controlled organic methods and harvested gently. After harvesting, the ripe olives are first cleaned and then naturally debittered in a sea salt brine. Natural debittering is a lengthy process, but it is worth it. This is because no chemical additives are used and the nutritional content andmonounsaturated fatty acids are retained.

The Kalamata olives from MANI Bläuel are very popular. Their outstanding flavour, exceptionally high quality and naturalness, as well as their ecological credentials, are impressive.

Kalamata olives pitted in brine I Mediterranean flavour

The Kalamata olive of the Kalamon variety is an excellent table olive. Whether on their own as a starter, in salads or in hot dishes, their unmistakable flavour makes them a versatile ingredient. However, it is not only a great snack, but also plays a central role in Mediterranean and especially Greek cuisine. From traditional dishes to creative, modern recipes, the Kalamata olive lends its characteristic flavour and richness to many dishes.

A Greek classic, for example, is the Greek farmer's salad (horiatiki). It consists of tomatoes, cucumber, red onions, feta cheese, olive oil, oregano and, of course, Kalamata olives. The olives give the dish its characteristic flavour. An Italian classic with black olives is spaghetti alla puttanesca with spicy tomato sauce, olives, capers and parsley.
