P.D.O. stands for Protected Designation of Origin and means that the olive oil is only pressed from olives from the Kalamata region. The olive oil therefore has a protected designation of origin. The quality of an olive oil is influenced by many factors. The location, cultivation, climate, soil and olive variety are decisive quality factors. All these factors must harmonise in order to obtain an excellent olive oil. Kalamata olive oil is the product of a harmonious interplay of these factors such as climate (many hours of sunshine, sufficient rain), soil (rich in minerals) and olive variety (Koroneiki). But that's not all. Experienced care and careful harvesting are the recipe for success. The cold-pressed (<27°C) olive oil is made from 100% Koroneiki olives and can be used in many different ways in the kitchen (not just as a salad dressing).
