1. Bring enough water to the boil in a pan and add a little salt to the water with the pak choi. (First add the chopped stalks and after about 30 seconds the leaves. Do not blanch the pak choi in the boiling water for longer than one minute.
2. Drain and rinse with cold water. Flavour with olive oil and jalap lemon. Serve!
