Eggplant cream I Organic quality from Italy

The eggplant/ aubergine cream (Crema di Melanzane) from Belfiore is an organic speciality from Tuscany. Eggplants with olive oil, wine vinegar, grape juice, sea salt and garlic give this cream a Mediterranean, aromatic flavour. All ingredients are from certified organic farming. Mediterranea Belfiore is behind this delicious creation. The roots of this company go back to 1952, when Donato Ciarlo founded the company in Cecina, in the province of Livorno. Today it is run by his three daughters. Mediterranea Belfiore stands for organic quality from Cecina.

The aubergine cream can be used in many different ways and is more than just a spread (but as such is extremely tasty!).

The cream can also be used as a dip. One creative use of the cream is as a dressing for salad creations with feta and cucumber. (e.g. 3 tbsp aubergine cream with 2 tbsp olive oil, 1 tbsp lemon juice, 1 tsp honey, 1 clove of chopped garlic, salt, pepper and fresh herbs to taste. If necessary, add a little water for consistency).
