Giuseppe Sarubbi has perfected this passion in his jam, which masterfully combines the interplay of hot spice and sweet temptation. Giuseppe Sarubbi's chilli jam pays homage to the region's traditional spicy cuisine. Like a dance of flames on the tongue, it combines the rich spiciness of selected peperoncini with sweetness. The secret lies in the art of balance: here, the spiciness and sweetness harmonise with each other as if they were meant for each other. At the same time, Sarubbi refrains from using flavour enhancers and additives during the entire production process.

Use of chilli jam from Italy

The peperoncino jam consists of chilli (50%), sugar (48%) and lemon (2%) and is therefore significantly sweeter than a conventional chilli sauce. The sweetness combined with the spiciness makes the chilli jam a versatile and interesting seasoning that goes well with cheese platters, grilled food (e.g. a juicy steak with the jam) or as that certain something on a Mediterranean sandwich. Recipe suggestion: Spicy-sweet chilli jam chicken

Ingredients:

  • 4 chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons chilli jam from Giuseppe Sarubbi
  • 2 garlic cloves, finely chopped
  • 1 tsp grated fresh ginger
  • 1 tbsp soy sauce
  • Juice of one lime
  • Fresh coriander leaves for garnishing

Instructions:

  1. Season the chicken breasts with salt and pepper. Heat the olive oil in a pan and fry the chicken breasts on both sides until golden brown. Then remove from the pan and set aside.
  2. In the same pan, sauté the chopped garlic and grated ginger for about a minute over low heat until fragrant. The garlic should not turn brown/black.
  3. Add the Giuseppe Sarubbi chilli jam and soy sauce. Mix well to allow the flavours to develop.
  4. Return the chicken breasts to the pan and turn to coat both sides with the chilli jam glaze. Reduce the heat to the lowest setting and allow the chicken to simmer in the sauce for a further 3-5 minutes, until fully cooked through.
  5. Finally, drizzle the lime juice over the chicken and stir briefly to combine the flavours.
  6. Arrange the chilli jam chicken on a serving platter and garnish with fresh coriander leaves.
