The organic chestnut honey or forest chestnut honey is a deliciously tart and sweet companion for everyday use. It can be used as a natural sweetener for tea, baking or cooking. This special honey is produced in the picturesque hinterland of Calabria, where the Aspromonte, a mountain range covered by chestnut, beech and pine forests, characterises the landscape. Here, between the rugged Aspromonte mountains and the crystal-clear coasts of the Tyrrhenian and Ionian seas, a honey is produced that captures the beauty and diversity of this region. With its strong aroma and slightly tart flavour, chestnut honey is not only a delight for gourmets, but also a piece of untouched nature on your plate. A product that carries the Mediterranean soul of Calabria. The chestnut honey is obtained by cold extraction in the liquid state from the honeycombs and bottled immediately. It is therefore a purely natural product.

 

Chestnut honey is not only suitable for sweetening tea, but can also be used in savoury dishes: for example, in a sandwich with strong cheese, walnuts and chestnut honey.

Ingredients (serves 2):

  • 4 slices of fresh sourdough bread or rustic farmhouse bread
  • 100 g strong cheese (e.g. blue cheese like Gorgonzola, Roquefort or a mature mountain cheese)
  • 2 tbsp chestnut honey
  • A handful of walnuts (roughly chopped)
  • A few leaves of rocket salad or lamb's lettuce
  • 1 small pear (optional, for fruity freshness)
  • 1 tbsp olive oil (for toasting the bread)

Chestnut honey Flavour

Forest chestnut honey shows that honey doesn't always have to be sweet. The typical flavour of chestnut honey is characterised by tart to bitter notes. This makes it an excellent addition to strong cheeses, for salad dressings and for refining sauces.

 

The colour is dark with brown nuances.

The consistency of the honey varies naturally from liquid to creamy-solid with the formation of crystals.

The smell of honey is tart and flowery, like forest herbs (some say it smells like lead foot).

 

The chestnut honey from Salamita in Calabria is a natural product. Therefore, there are natural variations in consistency, colour and taste.
