The bitter orange has many names. It is also called bitter Seville orange and sour orange. Bitter oranges are ideal for making jam because the white parts of the fruit flesh, the seeds and the peel contain a lot of pectin, which allows the jam to gel without additives. Giuseppe Sarubbi's bitter orange jam does not need any added flavour enhancers, colourings or artificial additives.
The delicious bitter orange marmalade comes from Calabria, the southernmost region of the Italian mainland. There, in the fertile plains along the coasts and in the river valleys, not only olives and wine thrive, but also a variety of citrus fruits such as oranges, bergamots, citrons and, of course, our beloved bitter orange. Giuseppe Sarubbi uses only ingredients from the region for his jam creations. The bitter orange marmalade consists of 50% bitter orange pulp, peel and juice.
