The excellent Condimento Bianco (light balsamic vinegar) will have a new label from September 2024. Content, quality and flavour remain unchanged. Campo del Picchio Balsamico Bianco is made from the finest Italian ingredients: White wine vinegar and Trebbiano grape must concentrate.

Trebbiano or Trebbiano Toscano is a white grape variety. It is one of the oldest grape varieties and today the most widely cultivated in Italy and France. The juice of the Trebbiano grape (must) obtained by pressing is traditionally boiled down to obtain a thickened product (must concentrate). In combination with high-quality wine vinegar, this wonderful Balsamico Bianco is created. All ingredients are from certified organic farming

Light Balsamic Vinegar - Campo del Picchio - Organic Quality from Modena

The Condimento Bianco Campo del Picchio is made from Italian white wine vinegar and grape must concentrate, which is thickened at only low temperatures so that the fructose does not caramelise. This Condimento Bianco is characterised by a low acidity (below 6 %). This makes this vinegar ideal for preparing green salads, for refining light sauces as well as meat and fish dishes. The aromatic, fruity taste as well as the freshness and mild acidity is a masterpiece of the Fattoria degli Orsi. This maturation as well as exclusively Italian organic ingredients result in a velvety density.

Fattoria degli Orsi & Acetaia Bellei

The Balsamico Bianco of the Fattoria degli Orsi named "Campo il Picchio" is produced by the L'azienda agricola Fattoria degli Orsi with much passion and dedication. A few kilometres outside Modena, along small winding country roads and gravel tracks, you can reach the organic family farm. The farm of the Fattoria degli Orsi has been organic since its foundation in 1982. Far away from busy roads south of Modena, the Lorenzi family farm produces grandiose balsamic creations with a super price-performance ratio. Since 2018, there has been a partnership between the Fattoria degli Orsi and the Acetaia Bellei, which takes care of bottling, storage and shipping for the Azienda. This allows the Fattoria degli Orsi to concentrate 100% on growing the grapes and processing them into traditional vinegars (Aceto and Condimento).

Recipe suggestion: Refreshing Asparagus and Melon Salad with Condimento Bianco-Maple Syrup Vinaigrette


This delicious recipe for an Asparagus and Melon Salad with a tantalising Condimento Bianco Maple Syrup Vinaigrette is a perfect combination of flavours and freshness.


1) Cut off the end pieces of the asparagus and cook the spears in boiling water for 3-4 minutes until firm to the bite. Then rinse under cold water. Cut the cooled asparagus spears diagonally into 3 cm wide pieces.


2) Heat a tablespoon of olive oil in a pan and fry the asparagus pieces. Season with salt and pepper.


3) For the vinaigrette: mix well one tablespoon of olive oil, one tablespoon of Condimento Bianco di Modena (an organic white balsamic vinegar from Campo del Picchio) and one tablespoon of lemon juice with one teaspoon of maple syrup.


4) Arrange the melon pieces, mozzarella and sautéed asparagus on a plate and garnish with the tantalising vinaigrette.

What is Condimento Bianco and what is Balsamico Bianco?

What is Condimento?

The term "condimento" comes from Italian and means seasoning - it is defined as: substances or preparations used in cooking to flavour food, which may be of vegetable origin (herbs, spices, etc.), animal (meat stock, butter) or mineral (salt), sauces of various kinds. In principle, there are also very high-quality condimenti. In our assortment, for example, you will find various "condimenti" once on an olive oil basis (seasoning oil) - with chilli, garlic or turmeric - and on a wine vinegar basis (grape vinegar) with pomegranate, sea buckthorn and chokeberry. Light balsamic vinegar also falls under the category of condimento. Since there are no specifications for light or white balsamic vinegars. Therefore, they are not allowed to call themselves Aceto Balsamico di Modena and have to use the term Condimento.

What is the difference between light balsamic vinegar and Aceto Balsamico?

The difference between them lies not only in their colour and taste, but also in the way they are produced. While Aceto Balsamico is matured in wooden barrels and thus acquires a dark colour and intense aroma, the light Balsamico Bianco retains its typically fruity-fresh aroma and colour by being stored in stainless steel barrels.

What makes a good light Balsamico (Condimento Bianco)?

A good light balsamico is characterised by the place of production (Modena, Emilia-Romagna), the maturing time (at least 9 months) and the fruity fresh taste with a well balanced ratio of sweet versus sour.
