The Aceto Balsamico di Modena IGP ‘Etichetta Gialla’ or ‘the one with the yellow label’ for short is one of the high-quality aceto specialities in Bellei's Precious line with its high density and long ageing time. With a viscosity of 1.24, Aceto Balsamico di Modena IGP (yellow label) is well above average. This is because a conventional Aceto Balsamico di Modena from the supermarket usually only has a density of 1.06. The Aceto Balsamico di Modena IGP ‘Etichetta Gialla’, on the other hand, already fulfils the minimum viscosity requirements of an Aceto Balsamico Tradizionale di Modena.
The creamy texture not only testifies to a long ageing period of approx. 8 years in oak barrels, but also to a high proportion of cooked grape must.
