What does appassimento mean in wine?
Appassimento is an ancient wine-making process originating in Veneto. By drying the grapes before further processing, the water content in the berries is reduced and the more concentrated the sugar content and aromas become. There are several approaches to this. The grapes are harvested early to preserve the tartaric acid. After harvesting, they go directly onto special racks, straw mats or into wooden crates and are dried in attics, storage rooms or directly in the open air.
In the case of this wine "MIRASOLES Appassimento", the grapes are dried on the vine. This is done by cutting through the fruit canes of vines with stretching training around the time of harvesting. The grapes of the cut part dry slowly in the vineyard and thus the ingredients and also the sugar concentrate in the grapes. The wines therefore have a higher alcohol content and more concentrated aromas.
