What is the difference between balsamic vinegar and balsamic glaze?

Balsamico, or more specifically Aceto Balsamico di Modena IGP, is a liquid vinegar made from at least 20% grape must and 10-year-old vinegar (at least 10% wine vinegar), which acquires its typical flavour and appearance through barrel ageing (at least 60 days). The duration of maturation is decisive for flavour and density. The production of Aceto Balsamico di Modena IGP is governed by regulations and specifications regarding ingredients and production steps, etc. Balsamic cream or crema with Aceto Balsamico di Modena is made from balsamic vinegar, which is boiled down further to achieve a thicker consistency. Balsamic cream is thick and usually sweet. This is because sugar or other sweeteners and thickeners are often added to the cream to achieve the desired consistency and sweetness. To summarise, the main differences between balsamic vinegar and balsamic cream are consistency and taste. Balsamic vinegar is liquid and has an intense, sweet and sour flavour, while balsamic cream is thick and sweeter.
