Vegetables pickled in olive oil are ideal as starters (antipasti), in salads and in dips. Also excellent as a pasta sauce (Grigliata di verdure - drain the pickled vegetables and puree them with a clove of garlic and some pasta water - mix the sauce with the cooked pasta and heat it up briefly)
