Dried tomatoes in oil, or rather in the best organic olive oil, are an organic delicacy from Mani Bläuel in Greece. The high-quality ingredients and gentle processing give this speciality a wonderfully aromatic, juicy and mildly spicy flavour. It is produced in the traditional Greek way:
The tomatoes are dried naturally in the sun. The Greek tomatoes are spread out on large cloths and sprinkled with salt. This speeds up the drying process and keeps insects away. The natural temperature preserves the excellent flavour and the ingredients (vitamin C and lycopene).
After drying in the sun, the tomatoes are checked individually, rehydrated in water according to a traditional recipe, preserved in extra virgin MANI olive oil and rounded off with basil. This makes the pickled tomatoes wonderfully aromatic, juicy and mildly flavoursome.
Dried tomatoes are a Mediterranean highlight. Whether on their own as a starter, in salads or chopped into small pieces in pasta sauces or scrambled eggs. The tomatoes have a pleasant bite and always have the perfect consistency. The oil is also versatile and a wonderful addition to any dressing, on pizza or in pasta sauces. Ingredients: 400 g spaghetti, 100 g dried tomatoes in oil from MANI, 3 cloves of garlic (finely chopped), 50 g Kalamata olives (pitted), 3 tbsp extra virgin olive oil, 50 g grated Parmesan cheese, fresh basil (chopped), salt & pepper
Preparation: Cook the pasta in salted water until al dente, reserving a cup of the pasta water for later. In the meantime, lightly fry the chopped garlic in olive oil until fragrant. Add the sun-dried tomatoes (cut into thin strips) and kalamata olives (halved). Add the drained pasta and grated Parmesan cheese to the pan and pour in a little pasta water. If necessary, add a little more pasta water to adjust the consistency. Season to taste with salt and pepper and fold in the fresh basil. Sprinkle with Parmesan cheese before serving, if desired.
