The high acidity in vinegar creates an environment that is inhospitable to many microorganisms, which extends its shelf life. Therefore, vinegar cannot "spoil" in the conventional sense. Even if it has some cloudiness or sediment, this does not usually affect its quality or safety.
This vinegar speciality from Tuscany is produced using the traditional Aceto Balsamico di Modena method. The basic vinegar is mixed with pomegranate juice and matured in wooden barrels. The pomegranate taste combines sweetness and acidity in an exotic way. Thus this condimento has a fruity and sweet-sour aroma.
